We Americans love our food. It’s part of what has made this nation great. Our fertile farmlands and the abundance and variety of our agricultural output are the envy of the world. For most of our history, we lived close to the land, food was accessed locally, and we processed it in our own kitchens. But as our population and economy has boomed in the last century and we concentrated in cities, we industrialized our food system—with food coming far from home and processed multiple times. As foods rich in natural taste declined, we relied on high amounts of added sugar, fat, and salt to entice our palates. And it has taken a toll: our soil is polluted, our practices are unsustainable, and our health problems, including everything from allergy-related disease to obesity, are on the rise. This has all contributed to historic levels of heart disease, stroke, diabetes, and other causes of preventable death. The good news is that people are starting to find solutions. They’re voting with their pocketbooks for a new kind of food system—family farm, 21st-century style. Suburban and urban moms (and dads) want to know what’s in their food and where it comes from. No more snack packs, Ding Dongs, and soda for lunch. This revolution is not only in how people eat, but also in how they grow, distribute, shop for, and prepare food. And the food is better tasting, better looking, and better for you.The Real Food Revolution by Congressman Tim Ryan is a manifesto for this new food movement. In it, readers will find information on: • The history and current state of our food systems • Myriad negative impacts of our present food practices on our health and our planet • Pros and cons of the current farm bill and what changes could help restore our nation • What’s happening both at the national and local levels • How people can get involved, with actionable steps at the end of each chapter This is a non-partisan, good-news message that will inform, inspire, and help readers around the country get involved. The era of the Twinkie and the hot-dog-stuffed-crust pizza has been fun, but now it’s time for a change.

Globally, the food system and the relationship of the individual to that system, continues to change and grow in complexity. Eating is an everyday event that is part of everyone’s lives. There are many commentaries on the nature of these changes to what, where and how we eat and their socio-cultural, environmental, educational, economic and health consequences. Among this discussion, the term "food literacy" has emerged to acknowledge the broad role food and eating play in our lives and the empowerment that comes from meeting food needs well. In this book, contributors from Australia, China, United Kingdom and North America provide a review of international research on food literacy and how this can be applied in schools, health care settings and public education and communication at the individual, group and population level. These varying perspectives will give the reader an introduction to this emerging concept. The book gathers current insights and provides a platform for discussion to further understanding and application in this field. It stimulates the reader to conceptualise what food literacy means to their practice and to critically review its potential contribution to a range of outcomes.

For most of her life, Catherine Friend was a carnivore who preferred not to consider where the meat on her plate came from--beef didn't have a face, chicken didn't have a personality, and pork certainly shouldn't have feelings. But Friend's attitude began to change after she and her partner bought a farm and began raising sheep for meat. Friend's ensuing odyssey through the world of livestock and farming is a journey that offers critical insights--for omnivores and herbivores alike--into how our meat is raised, how we buy it and from whom, and why change is desirable and possible. From a distressing lesson about her favorite Minnesota State Fair food (pork-chop-on-a-stick) to the surprising gratitude that came from eating an animal she'd raised and loved, Friend takes us on a wild and woolly ride through her small farm (with several brief detours into life on factory farms), along the way raising questions such as: What are the differences between factory, conventional, sustainable, and organic farms, and more importantly, why do we need to understand those differences? What do all those labels -- from organic to local to grass fed and pasture raised -- really mean? If you're buying from a small farmer, what are the key questions to ask? How do you find that small farmer, and what's the best way to help her help you? In the same witty and warm style that characterized her memoir Hit by a Farm,Friend uses her perspective as a sustainable farmer and carnivore to consider meat animals' quality of life--while still supporting the choice to eat meat. Regardless of whether you eat meat once a day, once a week, or once a year, your perspective of what goes on your plate--and in your mouth--will never be the same.

Butter, oil, tallow, lard, schmaltz—nutritionally crucial yet often villainized, at once rich yet cheap, fat is one of the most paradoxical categories of foods we consume. Shaping every cuisine on earth, fats in their various forms come with myriad cultural and symbolic meanings, playing an important role for a variety of people, from poor farmers to decadent aristocrats. Fats tells the story of this extraordinary substance—alternately reviled and revered but nonetheless always a crucial part of our diets. Michelle Phillipov considers the changing fates and fortunes of fats across time and around the globe. From their past associations with prestige and social authority to their links to fast food and overindulgence in modern times, she explores the different meanings, debates, and controversies that have surrounded this staple food, which has been both an invaluable source of nutrition and the bane of public health concerns. She also looks to its current renaissance in media and popular culture and the renewed appreciation it enjoys as an important part of traditional foodways that stretch back all the way to prehistoric times, when the Paleo diet was even more popular than it is today. Dripping with recipes from around the world, Fats reveals and celebrates that one ingredient that makes everything taste better.

An instant classic for a new generation of monkey-wrenching food activists. Food in America is cheap and abundant, yet the vast majority of it is diminished in terms of flavor and nutrition, anonymous and mysterious after being shipped thousands of miles and passing through inscrutable supply chains, and controlled by multinational corporations. In our system of globalized food commodities, convenience replaces quality and a connection to the source of our food. Most of us know almost nothing about how our food is grown or produced, where it comes from, and what health value it really has. It is food as pure corporate commodity. We all deserve much better than that. In The Revolution Will Not Be Microwaved, author Sandor Ellix Katz (Wild Fermentation, Chelsea Green 2003) profiles grassroots activists who are taking on Big Food, creating meaningful alternatives, and challenging the way many Americans think about food. From community-supported local farmers, community gardeners, and seed saving activists, to underground distribution networks of contraband foods and food resources rescued from the waste stream, this book shows how ordinary people can resist the dominant system, revive community-based food production, and take direct responsibility for their own health and nutrition.

"We wanted to live in a place that could feed us: where rain falls, crops grow, and drinking water bubbles up right out of the ground." Barbara Kingsolver opens her home to us, as she and her family attempt a year of eating only local food, much of it from their own garden. Inspired by the flavours and culinary arts of a local food culture, they explore many a farmers market and diversified organic farms at home and across the country. In America today we see rampant development, unsustainable resource exploitation, and commodification ruin both natural and built landscapes, disconnecting us from our surroundings and threatening our fundamental sense of place. Meanwhile, preservationists often respond with a counterproductive stance that rejects virtually any change in the landscape. In The Working Landscape, Peter Cannavò identifies this zero-sum conflict between development and preservation as a major factor behind our contemporary crisis of place. Cannavò offers practical and theoretical alternatives to this deadlocked, polarized politics of place by proposing an approach that embraces both change and stability and unifies democratic and ecological values, creating a "working landscape." Place, Cannavò argues, is not just an object but an essential human practice that involves the physical and conceptual organization of our surroundings into a coherent, enduring landscape. This practice must balance development (which he calls "founding") and preservation. Three case studies illustrate the polarizing development-preservation conflict: the debate over the logging of old-growth forests in the Pacific Northwest; the problem of urban sprawl; and the redevelopment of the former site of the World Trade Center in New York City. Cannavò suggests that regional, democratic governance is the best framework for integrating development and preservation, and he presents specific policy recommendations that aim to create a "working landscape" in rural, suburban, and urban areas. A postscript on the mass exile, displacement, and homelessness caused by Hurricane Katrina considers the implications of future climate change for the practice of place.

From Cornwall to Cumbria, Norfolk to Northumbria she brings her extraordinary knowledge, huge passion, forthright opinions and inimitable wit to the distinctive history and regional character of every corner of England. In her cornucopia of local knowledge she reveals, for example, how Boudicca was the original Essex girl, that Lincolnshire has a coriander crop second only in size to India's, and just why a Cornish pasty should never contain carrots. As much an entertaining narrative as it is a travel companion, Clarissa's England will amuse, enlighten, surprise and delight all those who read it.
